Some of the most mysterious and enticing dishes I’ve tasted in my lifetime originate in Thailand. For many years, I was content to just dine in authentic Thai restaurants and let the mystery of all those spices remain so. Eventually, my curiosity and spirit of culinary adventure got the best of me, and I began experimenting in the kitchen with some of my favorite Thai dishes.
I started with Pad Thai, a flavorful noodle dish I’d sampled enough times and at enough restaurants to know good from not. My first attempt was decidedly not. But my second attempt was better, and the third better so. Today it’s good enough to share with you.
